This outstanding company is one of the most beloved and visionary small businesses in the NW region. To prepare their various corn-based food products, Three Sisters practices the ancient process of nixtamalization that was invented in Latin America centuries ago. They source all their organic corn from the most local and healthful, nutritious sources that can be found. Now, their products can be found throughout Oregon and SW Washington. This project has entailed the adaptive reuse of a small retail store into a large commercial kitchen for receiving, storing, processing and shipping maize, prepared tortillas, and other products. The project also includes admin and retail spaces, as well as expanded walk-in refrigeration systems.
